Barefoot in the Park Cookies

...by Food Babe

Flying high in a hot air balloon above a park in Napa Valley

Planning to spend a day in the park with my girlfriends led me to make some organic vegan oatmeal raisin cookies! I wanted to make something without chocolate to avoid a major melt down.

This recipe is inspired by one of my go to cookbooks “Nourishing Body and Soul – The Chopra Center Cookbook” by Deepak Chopra. It’s a simple cookbook with a lot of healthy ideas – there are no fancy pictures, just your imagination!

It’s amazing you don’t need butter, oil or eggs to make an awesome little cookie! Let me know if you try them, have any questions or need substitutions!

These were big cookies – about 2 tbsp of dough per cookie. You don’t need a lot of room between each cookie because there is no butter in them to make them expand.

Ready to put in the oven!

Serves: 6

Ingredients
  • 1 cup of whole wheat pastry flour or spelt flour
  • 1 cup of rolled oats
  • 1 and ½ cups of raisins
  • 1 cup of coconut flakes
  • ½ tsp of baking soda
  • 1 tsp of ground cinnamon
  • 1 tsp of ground cardamon (or pumpkin pie spice or allspice if you don’t have it)
  • ½ cup applesauce
  • ½ cup sucanat (this is whole unprocessed cane sugar, looks like brown small pebbles)
  • ⅓ cup maple syrup (Grade B)
  • 1 tsp vanilla extract

Instructions
  1. Preheat oven to 350 degrees.
  2. Place parchment paper down on a cookie sheet or lightly oil it with coconut oil
  3. Combine all the dry ingredients (flour, oats, raisins, coconut, baking soda, and spices) in a bowl and stir together with a whisk
  4. In a separate bowl combine and stir the sucanat, maple syrup, applesauce and vanilla together
  5. Slowly add the dry ingredients to the wet ingredients and combine until the whole mixture is wet and well mixed
  6. Using an small ice cream scoop, place each cookie on the pan and bake for 15 mins

Notes
Makes 12 big cookies or 24 small cookies if you use a tablespoon instead of an ice cream scoop

Cookies right out of the oven – cooling on a rack

  2. Vani,

I remember eating these delicious cookies you brought for me earlier in the year! I loved the taste of crunchy coconut and also, the fact that it had no egg!

  3. Cookies turned out great!! I have been looking for a healthy cookie recipe and this one is great! My 2 year olds first cookie and he loved it!

  4. What type of oatmeal do you use?

I was recently diagnosed with an autoimmune condition; the high dose of Prednisone is causing troubling side effects! I will be talking with my doctor about alternatives to the steriod and the one-year treatment plan.

This is the the first time visiting your site. I will be trying some of your recipes. :)

I need to thank my fb friend, Amy H. A. for sharing.

    • I typically buy organic gluten free oats. Hope you get to feeling better soon! I know what it feels like to be on prednisone, it’s no fun.
