Barefoot in the Park Cookies

Planning to spend a day in the park with my girlfriends led me to make some organic vegan oatmeal raisin cookies! I wanted to make something without chocolate to avoid a major melt down.

This recipe is inspired by one of my go to cookbooks “Nourishing Body and Soul – The Chopra Center Cookbook” by Deepak Chopra. It’s a simple cookbook with a lot of healthy ideas – there are no fancy pictures, just your imagination!

It’s amazing you don’t need butter, oil or eggs to make an awesome little cookie! Let me know if you try them, have any questions or need substitutions!

Ingredients
  • 1 cup of whole wheat pastry flour or spelt flour
  • 1 cup of rolled oats
  • 1 and ½ cups of raisins
  • 1 cup of coconut flakes
  • ½ tsp of baking soda
  • 1 tsp of ground cinnamon
  • 1 tsp of ground cardamon (or pumpkin pie spice or allspice if you don’t have it)
  • ½ cup applesauce
  • ½ cup sucanat (this is whole unprocessed cane sugar, looks like brown small pebbles)
  • ⅓ cup maple syrup (Grade B)
  • 1 tsp vanilla extract
Instructions
  1. Preheat oven to 350 degrees.
  2. Place parchment paper down on a cookie sheet or lightly oil it with coconut oil
  3. Combine all the dry ingredients (flour, oats, raisins, coconut, baking soda, and spices) in a bowl and stir together with a whisk
  4. In a separate bowl combine and stir the sucanat, maple syrup, applesauce and vanilla together
  5. Slowly add the dry ingredients to the wet ingredients and combine until the whole mixture is wet and well mixed
  6. Using an small ice cream scoop, place each cookie on the pan and bake for 15 mins
Notes
Makes 12 big cookies or 24 small cookies if you use a tablespoon instead of an ice cream scoop

    I was recently diagnosed with an autoimmune condition; the high dose of Prednisone is causing troubling side effects! I will be talking with my doctor about alternatives to the steriod and the one-year treatment plan.

  5. I made these tonight, tweaking as is my usual way. Since I can no longer tolerate wheat, I substituted buckwheat flour. I also need to eat anti-inflammatory foods, and this recipe (although quite tasty!) is not even close to acceptable for an anti-inflammatory diet. However, I made it a little less inflammatory, by reducing the buckwheat and oats to 3/4 c each, and adding 1/4 c each of ground flax seed (soaked in 1/4-1/2 c water) and hemp seed; also used 1/2 c honey instead of sucanat, and omitted maple syrup. As I love cinnamon, I doubled that to 2 tsp. The batter seemed too dry, so I added 1 tsp chia seed soaked in 1/4 c water. Laziness prohibited me from dropping by spoonfuls onto cookie pan. I simply spread batter in oiled glass pie dish and baked it for 30 minutes or so. Cut with knife like a pie, into 12 pieces, much like your 12 big cookies. So mine is now called Barefoot in the Park Pie!
    This has excellent flavor and nice consistency; thanks for the recipe! Next time, I’ll likely tweak it some more, perhaps replacing buckwheat with a nut flour . . .

  7. I have a question about a recipe I saw on your site around Thanksgiving 2013. It was for a Chocolate Mousse Pie. I thought I would make it with peppermint flavoring for Christmas but cannot find the recipe on your website. can you repost it please?

  8. I just can’t seem to find a good Oatmeal cookie recipe. Like many others, this one is just too mushy for me. Blah.

  9. I don’t know what I did wrong, but these are so dry! I added extra applesauce but they still baked exactly as I put them on the sheet. They didn’t flatten out at all. If I’d realized, I would have pressed them a little.
