Barefoot in the Park Cookies

Planning to spend a day in the park with my girlfriends led me to make some organic vegan oatmeal raisin cookies! I wanted to make something without chocolate to avoid a major melt down. This recipe is inspired by one of my go to cookbooks “Nourishing Body and Soul – The Chopra Center Cookbook” by Deepak Chopra. It’s a simple cookbook with a lot of healthy ideas – there are no fancy pictures, just your imagination!

I’ve had so much fun all week! It all started Sunday. I txted “Freedom Park @ 2pm, bring a snack, a drink and a blanket” to some of my girlfriends that I desperately needed to catch up with. The reason I picked the park was because I really feel you don’t have to go somewhere and buy something to really enjoy yourself. Sure, we could have met for brunch or at a coffee shop…but it was Sunday and some of my favorite spots are closed (Luna’s Living Kitchen!)…. so I started thinking out of the box…

Why aren’t you making your own Hummus?

Hummus is very nutritious if made fresh and can be a great pick me up that replaces processed junk in vending machines at work or prepackaged “health” bars. It’s got a combo of protein and fiber to keep you from craving junk. I throw hummus and a red pepper or a few carrots or celery sticks right in my bag before work almost everyday. It’s too easy.

Wedding Weight Loss Soup

As I strolled down memory lane, a particular soup I made kept popping up in my mind… So I decided to make it yesterday in honor of our anniversary weekend. It’s based on mostly green vegetables of kale and celery, but also includes some protein sources of cannellini beans and organic chicken.
