First the Cookie…..
Going along with the Flour Free theme of this past weekend, I made some chocolate chip cookies with no refined flour OR refined sugar. These are by far my favorite homemade cookies. They are crispy, but still melt in your mouth and to quote my friend Rob (I overheard him say this the day after) – “They were so good that I made a cookie sandwich, where I took one cookie and smothered it with two other cookies and ate all three at once”
Now the Contest….
Robyn O’Brien is considered the Erin Brockovich of the food industry – she one of my heroes. Check out this TED presentation where she explains how she became aware of how chemicals in food affects us and learn information she has uncovered about the food industry. It is startling to say the least.
Robyn read the blog about my Dad where I suggested her best seller ”The Unhealthy Truth” as a good resource to educate your family about food. Robyn immediately got in touch with me and offered to send me a copy of the book gratis and give it away to my readers. How cool is that, right?
What’s the catch? The only thing you need to do is go to my Facebook Fan Page “Like It” and then post a question on my wall you would like to know about me, exercise, travel, food chemical concern or any other random healthy lifestyle question.
I’ll add your questions to the list of FAQs I am compiling and post it on my site to share with everyone. I will randomly draw a name from the questions submitted by the end of July and send the book out to the winner. Good luck to everyone!

- 1 cup almond butter
- 1 egg beaten
- ½ cup date sugar
- 2 tsp unsulphured molasses
- 1 tsp vanilla extract
- ½ tsp baking soda
- ¼ tsp salt
- 4 ounces of grain sweetened chocolate chips
- Preheat oven to 350 degrees and line large baking sheet with parchment paper
- Mix sugar, molasses, egg, vanilla, baking soda, and salt in a large bowl
- Add almond butter, and stir to combine well
- Fold in chocolate chips
- Scoop 1 tbsp size balls onto parchment lined baking sheet
- Cook for about 12-15 mins (longer if you like crispy cookies)
- Place cookies on a cooling rack and cool for 5 mins

Wow, thanks for posting that link to the video. That seriously just rocked my world.
I am just now reading this blog entry, and I was so thrilled to see this book mentioned. I read this book while pregnant with my first child in 2009 and it really sent shockwaves through me. It was my first introduction to anything being “wrong” with our food system. I Was just oblivious before this and probably never read a label before this book.
I have been trying since then to eat as real as possible…but of course I continue to get reminders of ways to improve (ie your Chick-fil-a post which I have not been to Cfla since I read that and used to go at least 2x a week). I am at least making a HUGE effort with my children and I have to attribute at least part of how wonderful they are to a healthy diet.:) Thanks for your posts and recipes!!

I am just making your brownies! And still recipe surfing… I am wondering if I could sub coconut sugar for the date sugar? Have you tried that or do you think it’ll work??

Yes of course! You could sub coconut sugar for the whole amount of sugar if you like.

Do you ever use egg replacers in your baking recipes? If so, what kind do you recommend?
I noticed in your recipes you use a combination of warm water & flax seed to replace egg. Have you tried that for this particular recipe or do you think it would work for this recipe?

I would love to make these for my family. We are fairly new to this whole thing. My son is allergic to tree nuts so almond butter is out. Can I sub regular organic butter in these?

Your are my favorite blog. I thought I was super knowledgeable as to nutrition, but I am learning plenty from you that I didn’t know. Thank you. I would really appreciate your adding the calorie count. I love healthy foods, but oftimes they can contain many calories albiet low glycemic and fast metabolizing. I still like to keep a handle on my caloric intake.
