Friday Night Sweet Potato Quesadilla

Last night was so much fun catching up with my best friend, Nicole.  We’ve known each other and been best friends for over 25 years.  Last night reminded me of really good times when we were growing up together – we spent countless weekends in our teenage years sleeping over and watching cheezy shows like Baywatch while eating Papa Johns Pizza.

We didn’t watch any TV and definitely didn’t have any Papa Johns.  LOL.

Nicole came over right after work and we started the night off with lots of green juice shots before I got busy in the kitchen.  IMG 0003

We caught up on everything while cooking. This gooey sweet potato goat cheese quesadilla turned out fantastic! Nicole loved it so much she exclaimed “Tom (her husband) would love this!” – That made me smile ear to ear.

Food Babe's Sweet Potato Goat Cheese Quesadilla

Serves: 4
Ingredients
  • 8 small Ezekiel sprouted wheat tortillas
  • 1 large baked sweet potato
  • 4 ounces goat cheese grated or crumbled
  • 2 cups of fresh arugula
  • 1 thinly sliced red onion
  • ¼ tsp pumpkin pie spice
  • ½ tsp coconut oil
  • fresh cracked black pepper
Instructions
  1. Preheat oven to 450 degrees
  2. Heat coconut oil in a skillet on medium heat and cooked red onion until tender and brown
  3. Mash the baked sweet potato with spices and fresh cracked pepper
  4. Lightly spray a large rack with oil and place down 4 tortillas on rack
  5. Spread ¼ cup of sweet potato mixture on each tortilla/li>
  6. Continue adding red onions, arugula and 1 ounce of goat cheese on each tortilla
  7. Top each filled tortilla with another tortilla and spray lightly with oil
  8. Cook for 10-12 mins – watch carefully to make sure it doesn’t burn
  9. Remove from oven once top is slightly browned and cool for a couple of mins
  10. Use a pizza cutter to cut quesadilla into slices

  3. I made these twice, they’re absolutely divine! Goat cheese is seriously heaven-in-my-mouth. What an incredible idea! Just to add- My boyfriend despises sweet potato and he adored these quesadillas!

  4. Hey Vani, I love the sound of this recipe. We don’t really do pumpkin pie over here in the UK – which spices are in ‘pumpkin pie spice’?

  5. I tried this with a different take. Instead of using sweet spices (the pumpkin pie kind) I took it to the savory/spicy side with smoky paprika and chipotle. It rocked my house! Thanks for the inspiration. 😉

  6. WENT TO WHOLE FOODS IN PA AND DID NOT HAVE ORGANIC RAW GOAT CHEESE ONLY RAW GOAT CHEESE,… WHERE ELSE CAN I LOOK FOR ORGANIC RAW GOAT CHEESE THANKS!!

    1. I don’t think the goat’s milk cheese she used was organic. Obviously get it if you can but it does not have to be. I would try other natural food stores in your area – probably should call first. If no luck there, ask Whole Foods if they can get it for you… sometimes works. Good luck!

  7. Great Stuff – I live n motorhome – don’t cook here – have microwave tho – need recipie to go to pot luck. Preferably cold – or could heat at hosts house – afternoon get together of artists overlooking Lake Commanche, Amador County, CA about 44 miles 58 mins. away.
