Eats – Lots of Kale & A Wedding

This is the first weekend I’ve been at home in 4 weeks! Bridal Showers, Bachelorette Parties & Weddings – whew, partying can be so tiring. I am so happy to relax a bit before things get crazy again. Hope you enjoy a look at what I’ve been eating lately…

Please note: One thing I haven’t taken any pictures of lately, is the amount of green juice I’ve been having. I’ve been drinking it almost everyday, even when traveling. It’s what kept me sane from being away from home and my normal everyday eats.

Take out from Luna’s Living Kitchen – Kale Cornucopia & a half of a Skinny Witch. My husband had the other half.
Almond Butter Brownies about to go in the oven thanks to a Facebook mention I got from Robyn who said she was about to make them. Do you see the influence you all have on me?
Enjoyed the delicious “Food Babe” roll at Nikko. All vegetables and no rice thanks to my favorite sushi chef Yasu. I loved the fresh mango and pickled ginger on the side!

2 toasted Quinoa Masala Burgers on top of a kimchi massaged kale salad. (I know, I know, I eat a lot of kale!)
Being completely honest and transparent, I mentioned on my Starbucks Investigation post that I still go to Starbucks on occasion for hot water, to buy their organic snacks and use their internet when traveling. Some people got so bent out of shape about this and even accused me of stealing! I am definitely not a “moocher” like one commenter described. These are the organic snacks I bought during my last visit. The “Peeled”organic dried mango was such a treat.
My husband requested grilled cheese one night for dinner. I haven’t made a grilled cheese in ages! I used Ezekiel Genesis Bread, Drunken Goat Cheese from Earth Fare (my favorite at the moment), mustard, pickles and grassfed organic butter to make them. And lots of broccoli on the side.
Homemade Baked Sweet Potato Fries. Super easy and AWESOME.
Organic Raspberries and Peaches have been plentiful lately. They taste like candy to me.
An easy and healthy Peach Cobbler I whipped up for my husband’s dessert craving one night. I chopped up peaches and topped them with a mixture of coconut oil, oats, chopped almonds, vanilla, sea salt and maple syrup.
Last weekend we went to a beautiful family wedding for my husband’s cousin Penn. This was the delicious pear and walnut salad served at the Rehearsal Dinner.
Sadly, I only had a bite of these cupcakes served at the After Party. I wish someone would have given me the heads up, I would have saved room and not eaten as much of the dessert that was served with dinner.
A very fun and entertaining afternoon with the family before the wedding. We went to a wine tasting, where we all thought the wine was terrible! The laughter and hilarious jokes really made up for it.

I love weddings that have a beautiful display of fresh vegetables to load up on.
And of course, I tried the cake and it was AMAZING! I definitely felt a sugar hang over the next day. Do you ever get those? It’s crazy how sensitive I am to refined sugar, since I don’t have it too often.

  1. I have sugar hangovers too! Everybody thinks I am crazy, but for months I have lowered my sugar intake. Now a regular cupcake or ice cream makes me feel like crap afterwards. I used to eat so much sugar every day it was insane. I remember eating 12 peanut butter cups in a few minutes when I was younger! Gross! I am lucky I didn’t end up overweight or with diabetes. Anyways, thanks for the update Food babe! Your kale intake is inspiring! I wish I could find organic kale in Melbourne!

    1. I’m so happy to hear I’m not the only one. Now when I find a “regular” treat tempting, I just think back to how foggy and out of it I feel when I eat it. I used to eat whole boxes of runts, fun dip and packs and packs of skittles, it was sickening. I have heard that Australia doesn’t have a lot of organic kale, maybe you should grow some and start selling it, I bet you would make a fortune 🙂

      1. Oh how I wish it was Melbourne Australia, but I live in Melbourne, FL. It is a smaller city with mostly retired people, and very little organic food. 🙂

        I live in melbourne, fl too. If you check Paradise Health Stores, they have lots of fresh organic kale swiss chard etc…. Farmer’s Markets have lots of local veggies as well. I purchase them weekly. Hope this helps

Oh sugar hangovers … just how I describe them … I even had them back when I ate a lot of sugary foods, frequently … that was one of my first clues that I needed to change the way I was eating! One small chocolate would send me to nap time in 10 minutes … I actually feared I might be diabetic and went to the doctor to be tested. Now that I eat a diet primarily free of processed sugars (I would say once a month or less) I know that feeling is a sugar high and a resulting sugar hangover … and I agree – I often pass on sweets just the same as I pass on alcohol – if I need to be alert the next day, it is just better to say no!

  2. I agree that your kale intake is inspiring! I just found your blog a couple weeks ago and have been completely re-adjusting my diet to include even more whole foods and not have any fake “foods”. This weekend my husband and I went to a birthday party and I had a piece of cake (a fruit tart) and felt a little loopy afterward, no sugar hangover, but I felt like I was tipsy just from the sugar in the cake! I also claim a victory because I was not even tempted by any of the other sugar goodies that were at the party and I have the biggest sweet tooth.

  3. As a future RD, kale is one of those things I really wish I loved, but I just can’t get past the taste! Do you have any suggestions on ways to incorporate kale into my diet without it tasting like…well… raw kale?

    1. Kale chips: olive oil, salt, pepper and/or garlic salt. Cook for about 20 minutes turning half way through at 275 degrees. Even my son goes to town on these (in fact he started eating the kale plain before we cook them). I roast my green beans and broccoli much the same way and even a 4-year old loves them.

    2. Sauted Kale: Delicious and So good for you!
      Seperate the kale leaves from the stems
      Throw some grass-fed butter in a pan
      melt the butter on low and throw in your kale leaves, stir until the kale turns dark green
      Sprinkle with sea-salt and pepper. My 5 and 6 yr. old eat it up, too! Yummy!
      When kale is slightly sauted, the nutrients are more readily available. Enjoy! 🙂

Where do you buy that gorgeous Ezekiel Genesis Bread that you used to make your grilled cheese sandwich in the photo above?

      1. I do but in Belmont now. We’ve lived in the Charlotte area since 2001. I still get up to Charlotte each week to visit EarthFare, Luna’s, Berrybrook, etc. & to pick up my Nourish food.

  5. I was walking in Books a Million and your book “The Food Babe Way” grabbed my attention! I had never heard of you or your blog. I am definitely trying to eat more healthy and take care of my body. I’m 63 yrs. old with four grandsons ages 8,6,2, and six months. I love baby sitting and playing with them! After glancing through your book I knew I had found a treasure! I was already doing the lemon water each morning. But, I have learned so-o much more. Thank you so much for writing your book!! I’m recommending it to all my friends!! 🙂

  6. Vani you are a blessing to us all! I noticed you use goat cheese in your recipes, do you eat regular dairy? I have MS and just went “dairy free” completely, I was using the fat free cheese but after reading what is in our milk supply I just can’t consciously eat it anymore. Is goat’s milk/cheese cleaner thank cow’s milk? I have tried to find anything you have written on it and have not found anything. Keep up the amazing work you do!!! :o)
