Beet Root French Fries

A few weeks ago I received a new cookbook called Veggies for Carnivores which totally made me giggle and immediately think of one of my male friends that won’t go near any vegetables…Did Lora Krulak, the author, unlock the secret to turning veggie haters into veggie lovers?

The simplicity of ingredients and recipes makes bringing vegetables to the center of the plate a piece of cake! I don’t know anyone who could pass up these beet root french fries I made today inspired by one of the recipes in her book. She suggests you can substitute any root vegetable (carrots, parsnips, sweet potatoes, etc.) – but I just couldn’t resist making the fries with beautiful beets. Beets are absolutely incredible blood cleansers and can protect you from cancer by getting rid of all the toxins that enter your bloodstream… I try to eat them every week and getting them in just got a little bit more delicious – Thanks Lora!

Serves: 2
Ingredients
  • 2 large beets
  • 1 tbsp olive oil or coconut oil
  • ¼ tsp sea salt
Instructions
  1. Preheat oven to 375 degrees
  2. Wash and peel each beet, cut into long rectangular pieces
  3. Toss beets with olive oil or coconut oil and sprinkle with sea salt
  4. Place beets on a oven safe rack and bake for approximately 25 mins, rotating half way through
  5. Beets should be slightly brown when done, serve immediately
  6. Toss with red chili flakes and lime for a kick!

  2. I love this concept! With this book I could help my other half and his 13 yr old eat more veggies in a very fun way! We live in Wisconsin where the only “veggies” people seem to eat are potatoes and corn! Bring on the healthy colorful veggies!!!:)

  8. cool and the gang. I seriously love vegimals! I bake 3-4 heads of cauliflower at a time, and plan my days around which vegimal I desire that day. shopping for produce is a blast for me. problem is, my hubby doesnt feel the same way. he knows he should eat them and he is better than when we met but its the french fry that makes him happy. the french is one of many things I will not eat. I roast caulis, brussels, carrots, etc. but I never thought to cut some of these guys into french fry shapes. they might dazzle him and with a tahini or vinaigrette to dip into he might eat some beets. very cool!!!

  9. Hi Vani, the info on your website is really informative. We have been vegan/80% raw for a few years now and its interesting to note your findings on ingredients like agave. Have been looking for info to get us to the next level and then stumbled across your website. its beetroot fries for us this week! although we do enjoy yam, sweet potato and brussel sprout fries

    I use a Flavorwave oven especially when I want the crispy texture that usually comes from deep frying in oil, without actually having to use oil at all. I was wondering, if you have any research regarding the use of flavor wave oven. I love your blog. I have recently stopped using Microwave oven. Thanks for sharing your research!

  13. For people who might not like beets you can make mock french fries just by cutting up a tube of pre-cooked polenta into sticks, spraying them with olive oil cooking spray, salt and pepper, and bake.

  14. Boy have we got some eating challenges! I totally Love what you are about and truly want to transform our eating habits. I do not want to become sick from what the media and government tell everyone is okay to eat. We have grandchildren that we are raising and I want to give them a solid foundation on how to feed and fuel their bodies. Whether I win the book or buy it, I am excited to be in this season of my life with this new adventure in learning to eat healthier! Looking forward to this healing and transforming journey!

  15. I’ve not tried the beets fries – yet- –
    1st I want to state that even though I’ve eaten carrots, I’ve never loved nor craved them. –

    But that changed after I used basically this same recipe for Carrots.
    They weren’t crispy because I usually bake them on parchment paper -that way they have more of the coconut oil flavor – I did try baking on rack but they just didn’t have that extra flavor I have grown to love.

    The 1st time I baked these, I almost ate a pound for lunch – snacks – then more for dinner – but made myself hold back some for the next day. They were even good cold. So now I’m a Carrot fan & have baked them this way often for about 2 months – when I 1st found the recipe.

    So I know the beets and other veggies will be really good.
