Brown Rice Vegetable Spring Rolls

Can you see the excitement on my face?  That’s what happens when I find a new food that I absolutely love.

Ever since visiting Thailand last spring, I’ve been obsessed with the idea of making something like this recipe below. Any combination of crunchy vegetables, herbs and flavors will work with these new brown rice spring roll wrappers I found recently. I hope you enjoy the combo I came up with that includes fresh mint leaves and a Thai inspired dipping sauce. Two of these wraps make the perfect make ahead lunch or you can make a bunch to serve as appetizers like I did…There is something incredibly refreshing about these – I know you will savor every bite!

Serves: 3-6
Ingredients
  • 6 brown rice spring roll wrappers
  • 2 carrots thinly sliced
  • 1 red pepper thinly sliced
  • 1 avocado cut into strips
  • 1 cup mint leaves
  • Dipping Sauce:
  • ¼ cup rice wine vinegar
  • ¼ cup Thai fish sauce
  • 2 tbsp coconut palm sugar
  • 1 tbsp ginger minced
  • 2 tbsp lime juice
  • 1 clove garlic minced
  • ¼ tsp red pepper flakes
  • 2 tbsp nama shoyu or tamari
  • 2 spring onions chopped
Instructions
  1. Dip one brown rice wrapper into big bowl of warm water for at least 5 seconds
  2. Place wrapper on cutting board and add slices of carrot, red pepper, 4 mint leaves, and avocado
  3. Fold two opposite sides of wrapper first and then roll tightly
  4. Cut roll in half
  5. Repeat these steps to continue making more rolls
  6. To make sauce, combine all sauce ingredients in a bowl and stir
  7. Serve rolls with dipping sauce and enjoy!

***Please use all organic ingredients if possible***

Please note – I’ve never seen brown rice spring roll wrappers in the store before even Asian markets (only the white rice version). If you do know where to find them – please let me and others know in the comments below. I just love these wrappers and I wish everyone could try them!  Until then – you can get them online here like I did.

  2. Hi Vani these look great, thanks so much for the product recommendation! My question is, can you freeze the unopened packages of wraps to keep them fresh? Or do they have a long shelf life? I ask since you have to buy a pack of 6 on Amazon. Thanks!

    1. I too had to buy a pack of 6 and they stay great unopened in my pantry. I don’t think they go bad that quick… not sure about freezing them, I don’t think it will be necessary. I also gave a pack to my Mom and to Lisa at 100Days… they make great hostess gifts 🙂

  3. I found them in store. Want to say Whole Foods, but might have been Raley’s. I live in Northern California. Didn’t like them. They were really difficult to work with and didn’t stay together when I did manage to roll them.

  4. Just starting out with living a healthier life. Got my juicer in the mail yesterday. I have a question about sugars. I love tea but have always had a spoonful of sugar in it. I don’t care for honey or maple syrup. What is a good sweetener to use? I like stevia in the raw but I don’t think that’s too healthful either!!!

      1. If you can’t go without sweetener in your tea this is what i use..its called Rapadura sugar it is organic, unbleached and unrefined sugar. from Rapanzul brand. hope this helps. if you cant find it under Rapadura look for Organic Whole Cane Sugar

    1. I’m a big tea drinker myself and it may end up being the one thing I can’t give up being sweetened (although I’ve stopped using white sugar). I’ve tried honey but to me it ruins a good cup of brewed tea because honey has a distinct flavor, unlike white sugar which is a neutral sweet. I like stevia in cold teas but not in hot tea…there’s a bitterness and aftertaste I don’t care for when it’s in a hot bevvie, but not in a cold one. I only use pure stevia with nothing added. Read the labels…some stevia products have added stuff like dextrose and erythritol (Truvia has this). Soooo…I’ve started using coconut palm sugar and I like it very much, but I’m still trying to limit myself to no more than 2 sugared cups of tea each day.

    1. I have not eaten rice or rice products in years because of the arsenic content, what are your thoughts on this

  5. These look fantastic! I love that its something to which one can add anything one might have on hand…there are so many great possible combos! I also love that these are brown rice wrappers as that is more healthy. I have made springs rolls before and love the fact that the rice paper is so thin and really lets the ingredients shine through. Tofu might be a nice addition. Or pork (if you’re a meat eater).

  6. I have made the rice paper salad rolls but wanted something to take to work the next day and thought the fresh salad rolls would be no good. Instead I used vermicelli, chicken, capsicums and onions etc and sauteed in virgin coconut oil then I gently fried the rolls I made in coconut oil and it was just like a spring roll. I did dip the rice paper in a tiny amount of beer instead of water to make golden but was amazed at the great texture etc and it was nice to have these again since I am now gluten free. I think raw is better/healthier but these were good for next day food 🙂

    1. hahaha. I figured some one would notice that! I was getting ready for a party. I like Late July (plain flavor) yellow or blue corn chips. 100% organic.

  11. Is that a norwalk juicer?! ahhhhhh! I want one so badly, but have a functioning breville juicer, a robot coupe food processor and a vitamix so I feel like i can’t justify the expense at this point… eventually though. 🙂

    The use of a brown rice wrapper has me wondering two things – (1) are you concerned at all about the arsenic levels in rice, and how do you weigh that potential issue with the newer potential issue of fair trade with quinoa as an alternative grain, and (2) have you read the book Wheat Belly yet? It basically states that wheat has been so genetically modified over the years that even “healthy whole grains” (ie, 100% whole wheat) can affect every organ in the body, even causing in the worst-scenario cases cancer and/or fatalities. What are your thoughts on that? It is nearly impossible to avoid everything that contains wheat (even some lipsticks and prescription drugs, for example), but I’m trying to drastically reduce my intake. Scary stuff. You should read the book!

  14. Happy belated birthday! I wanted to let you know that the investment in a Vita Mix is well worth the money. I have a commercial Vita Mix that I purchased 19 years ago when my oldest son was a baby. It is still an amazing machine and I use it almost everyday to make juices, smoothies, soups and bread. The stainless variety of Vita Mix makes amazing bread quickly and the kneading is completed using the machine. Thanks for all of your wonderful posts.

  15. Love this recipe. Has anyone made these the day before and taken them to work? Just wondering how they hold up.

    1. I have made similar ones before with regular rice paper.. never tried the brown rice ones but I am definitely going to give them a shot! If you want to make them for your lunch the next day I highly recommend making them later at night… if they are made too much in advance the wrapper will start to dry out and crack/become chewy.

  18. I have to try these! I love making fresh spring rolls and I had no idea they made them with brown rice!

    I make mine with a little rice noodle (they make brown rice as well) with shredded veggies, spinach, cilantro, tofu, or whatever I have on hand. I also highly recommend this Asian dressing from Detoxinista (http://detoxinista.com/2012/03/creamy-asian-coleslaw-vegan/) with a little bit of Sriracha if you eat it. I sub the almond butter for peanut butter and the stevia for honey and it tastes exactly like the peanut sauce you get at Thai restaurants served with the spring rolls! Addicted 🙂

    I ‘m just asking your opinion about using the Rice Paper wraps for my 7 year old. Any updates on the arsenic in Vietnamese rice products would be welcome, I just got some wraps, these ones are white rice, I’m a little concerned about using hem for my 7 year old daughter and just wondering if you have any comments on the arsenic issue?
