Spicy Tomato Kale Soup

Hi there! I want to share a quick recipe I made tonight that is one of my absolute favorite comforting meals – Spicy Tomato Kale Soup. I can’t even begin to tell you all of the many reasons I love this soup – is it is really easy to make, lasts for a few days, freezes well, can feed a crowd, everyone loves it… I could go on and on.

I’d like to point out one of the products I used that is fairly new in my pantryBioNaturae Strained Organic Tomatoes. These tomatoes are certified organic and come in a BPA free glass bottle, which is a major step up from the BPA filled aluminum cans that most tomatoes come in. Also – these tomatoes are SALT FREE! Which means you can add high quality sea salt to your liking. This is a big deal since most of the salt they put in cans of tomatoes is highly processed, bleached and devoid of minerals.

I used Eden Farms brand cannellini beans which is another guaranteed BPA free product, also free of processed salt and certified organic. These beans add a nice creamy texture to the soup once it is pureed. You’ll never miss the cream that most recipes use in a soup like this!

These two products are a must in your pantry! Add them asap so you can make this yummy soup anytime!

Food Babe’s Spicy Tomato and Kale Soup

Serves: 6

Ingredients
  • 1 tsp of olive oil
  • 1 white onion chopped
  • 4 carrots peeled and chopped
  • 2 garlic cloves minced
  • 1 tsp sea salt
  • ½ tsp black pepper
  • ½ red pepper flakes
  • 1 tbsp fresh rosemary
  • 1 tbsp fresh basil
  • 1 tbsp fresh sage
  • 1 bay leaf
  • 24 ounces of pureed tomatoes
  • 1 quart of vegetable broth
  • 1 can of Eden Farms cannelloni beans strained and rinsed
  • 2 cups water
  • 1 bunch of kale chopped

Instructions
  1. Heat olive oil on medium heat in a large pot
  2. Add onion and carrots and cook for about 4-5 mins
  3. Add garlic next and cook another 2 mins
  4. Add spices, broth, water, and tomatoes to pot and bring to a boil
  5. Once soup is at a boil, reduce to simmer and add beans
  6. Simmer soup for 25 mins
  7. Discard bay leaf and puree soup using a hand blender
  8. Add chopped kale to pureed soup and stir into pot

Notes
Serve with crunchy crackers or a piece of toasted sprouted grain bread. ***Please buy all organic ingredients if possible***

It’s the Weekend – Woot! Woot!

Happy Happy Weekend Everyone!!! Can you tell I’m excited!?!

Before I go plop my booty on the couch for the rest of the evening, I wanted to share my eats today…

Today started with hot water with lemon and cayenne – Habit #1 (Who’s doing this too?! – Have you adopted this habit yet?)

Followed by 2 heaping tablespoons of Vitamineral Greens superfood powder… Did you know this serving size has 10 grams of protein for only 50 calories! And it’s all plant based!  Amazing, huh?

I did an energizing hour of cardio before work and made this kale smoothie, which I enjoyed at my desk…..

Habits for the New Year and Beyond – #4 Drink a Green Drink Every Single Day

Habit #4 – Drink a Green Drink Every Single Day…

Consuming green drinks is the best way to get greens in your diet, provide your body a rich source of chlorophyl on a daily basis, and ultimately is one of the key actions you can take to keep your body in an alkaline state to avoid disease.

Recently I was asked about my opinion on green juicing vs. blending and if I thought one was better than the other. I think they are both important in one’s quest for wellness and vitality. I drink both types of green drinks for different reasons. I drink juice to deliver as many nutrients to my body as possible at once and I drink green smoothies for the beneficial fiber. As long as you chew your green drinks your body will be able to digest and receive the benefits. Don’t just slam down a smoothie or juice – you need that chewing action for digestive enzymes to do their magic.

With that said, drinking green drinks is simple…

It can be small like a wheatgrass shot….

What to Eat Before Holiday Parties + Contest!

Everyday Eats is back once again… This time with the holiday party edition – My lovely building that I live in threw it’s holiday year end party last night… It was FABULOUS.

Check out all the details…

Morning -

Hot water with lemon & cayenne, Vitamineral Green Powder and a hot cup of green tea!

Worked out – Did some P90x Plyometrics… and then made this smoothie.  Lots of Kale, some strawberries, a few pieces of pineapple, water, chia seeds and whey protein powder.

Afternoon -

For Lunch – I started with a Tree of Life juice from one of my favorite restaurants in town – Luna’s Living Kitchen.

Food Babe Tip:  ALWAYS drink your juice on an empty stomach and wait at least 20 mins before consuming any solid food.  This will allow your body to immediately reap all of the live enzymes, vitamins and minerals from the juice.

Followed the juice about half and hour later by some mixed cut up fresh veggies  - carrots, green peppers, red peppers, and celery I threw in my purse earlier.

And then more fabulous takeout from Luna’s… “The Skinny Witch” – My absolute favorite dish – A veggie burger made with quinoa, raw hummus and pickle relish wrapped all up with a collard green…

I spent some time at Barnes and Noble reading about this and that…. Then went grocery shopping at Earth Fare… This was my cart… People are always staring at my cart like I am a freak, even at Earth Fare. It’s kinda hilarious.  And I usually always get a question at the check out too! This time… “What are you going to do with those Dandelion Greens”?

I ate two of these men before I got to the checkout from the Earth Fare Bakery – So wrong – but so right.  Of course I paid for them. Duh. I really need to make some good healthy gingerbread men next week – Does anyone have a good recipe you can share?

After checking out, I was presented with this beautiful work of art titled “A Representation of High Fructose Corn Syrup” – This was Kathryn Whitesides’ graduation project from the Northwest School of the Arts.  INCREDIBLE – Now I know! HFCS is brown, really decrypted and artificial looking – I imagine, this is what consuming HFCS makes the inside of your body look like too. Gross. Stay Away!

I wish I was this savvy about what was in my food at Kathryn’s age…

When I got home – I quickly put the groceries up and took an awesome walk outside – There is AMMMMMAzing weather this week here in Charlotte, NC – High 60′s and everything smack dab in the middle of December!

On my walk, I visited my favorite baker in town – Nelly from Nelly’s Naturals. She’s one of the only people in town to make 100% organic baked goods.  If you’ve never been to 7th Street Public Market or seen her before at Atherton Market – Go visit her and try her samples! You’ll be hooked just like me!  I spent $8 (voting with my dollars -YEAH!) on some goods for my husband – her savory olive cookies and a scone for the morning…

I got home and quickly accomplished 20 mins of pilates and stretching before the party…

I consumed a delicious kale and wheat berry salad before the party – Remember my saying for Holiday Parties this Season:

“Eat a big salad before the party, don’t worry – you’ll still have room for something naughty” :)

My Favorite Workouts – Turbo Kick & Turbo Fire

I haven’t written about working out in a long time. You can see where my ultimate passion lies by the number of posts I write about food and nutrition. But did you know that taking away the ability to workout is Food Babe’s kryptonite?

I can just about get through anything I face on a daily basis unless my body stays still or stagnant for too long. Not being able to exercise – I get cranky, irritable, stressed, anxious, easily pissed off, etc – you get the idea – I become one miserable person inside. This is why I make it a priority to workout every single day – it doesn’t have to be a no holds bar type of workout – but something every day to get my booty moving to calm my mind, to breath, to sweat, and to most importantly get that endorphin high!
