Banana Nut Waffles

Last Sunday was absolutely glorious – It was sunny outside, the day was free to do whatever I wanted and I started the day with a big beautiful big glass of Kickin’ Kale Juice … just before enjoying these OMG SO GOOD waffles.

(FYI – I always wait about 20 mins after drinking juice before having anything else because I like the juice to do it’s magic. Consuming other foods at the same time complicates the digestion of the nutrients in the juice. Following this principle allows the vitamins and minerals in the juice to reach the cells of your body faster…which always gives me an immediate burst of energy – the wait is worth it!)

This waffle recipe uses almond flour which is an amazing substitute if you are trying to eat less wheat products and/or gluten free.  I do include eggs in this recipe (if you are vegan, please don’t freak out on me) – like I’ve said before – I eat about 90% plant-based but do include the occasional high quality fish/meat and/or organic dairy products in my diet.

I haven’t tried these waffles using an egg substitute like flax or chia…. so if you decide to – please let me know how they turn out!

This recipe takes less than 10 mins and you got sweet & nutty WAFFLES! Yum.

Serves: 4
Ingredients
  • 4 eggs slightly beaten
  • 2 mashed ripe bananas
  • 1 tsp vanilla extract
  • ¼ cup water
  • 1 cup almond flour
  • ¼ tsp sea salt
  • 1 teaspoon baking soda
  • ½ tsp cinnamon
  • ¼ cup walnuts chopped
  • 4 tbsp maple syrup for serving
Instructions
  1. Preheat waffle iron
  2. Whisk together the eggs, banana, water and vanilla
  3. Add almond flour, cinnamon, walnuts and baking soda into the egg mixture
  4. Grease preheated waffle iron with cooking spray or coconut oil (it depending on what type of waffle iron you have)
  5. Spoon batter onto hot waffle iron
  6. Cook until golden or timer goes off (~4mins)
  7. Serve hot with a dash of maple syrup, coconut oil or butter

Much to my surprise and delight, KitchenAid recently sent me their (very fancy) waffle baker to try out and my goodness – this thing is CRAZY. It’s like the Ferrari of waffle bakers – industrial strength if you will, and has all the bells and whistles you could ever want.  If you have a family or want to invite people over to brunch – this appliance is for you.

It makes 2 huge Belgium waffles (or 4 servings) in about 4 mins, has a timer so you don’t burn your waffles and a perfect gauge to tell you when it is warmed up just perfectly. It’s really fun to flip sides once the batter is in too.

My waffle recipe turned out PERFECT using it…so I (kindly) asked KitchenAid to host a giveaway…I was super HAPPY they said yes!

  1. Sorry if someone has already asked this question, but will this work with whole wheat flour instead of almond flour? Or how can I make almond flour? Thanks!

    1. You can buy Almond flour through Amazon.com or simply take raw, blanched Almonds and process them in a food processor. You have to be careful not to over process the almonds otherwise you will get almond butter.

  2. These look so good! I can’t wait to try them. I am wondering though about your waffle iron. Were you able to find one without teflon? I have resorted to using my lodge cast iron waffle iron that goes on the stovetop. It makes tiny waffles though and is so time consuming. I miss having a big, electric iron!

  4. Is this made with Teflon? If so, you might be defeating the purpose of cooking with your all natural ingredients, by then poisoning them with Teflon =/

  7. Made these for breakfast today! I ran out of eggs though, so i subbed it with flax meal mix, had to add a little wholemeal flour because they were a little to wet but the end product tasted really good!! 😉 yummmmmmmmy!! I love waffles! Haha

I have the same Kitchenaid waffle baker and have loved it for the past few years, but just stopped using it because I noticed a warning in the manual that I somehow overlooked……it contains a substance that is a KNOWN CARCINOGEN in the state of California. I can’t ignore that, so unfortunately we aren’t using it anymore. Just thought I’d share.

    1. Very interesting. …thanks for sharing. We need to lower our omega-6 ratio & we eat a lot of almonds. I also am hypothyroid. As frustrating as it is, we do need to know what we are putting in our bodies. This is an added tool.

  11. You ended up causing me to buy a Belgian waffle maker! I am now making a double batch of these weekly, 5 for daily breakfast for my teenage son, and 3 for the 3 of us as they come off the waffle maker. I freeze the 5 and reheat the quarters in the toaster. They come out perfect. What kid wouldn’t want a serving of almonds, an egg, and half a banana for breakfast!

I made the waffles (used gluten-free pancake mix as I had no almond flour and no food processor to make some!) with the addition of dark chocolate chips as a topper and they are really delicious! My husband and I like them better than the recipe that came with our waffle iron…Thanks so much for great food ideas!

  15. Can’t wait to try these! Quick question though- is there an oil sprayer you recommend? There are some that are all aluminum, some all plastic, and found a stainless steel one but it too is lined with plastic. None seem toxic-free to me so I was wondering if you know of any? Thanks!

    1. I have a glass oil sprayer I found at Bed Bath & Beyond. It works great. I put a liquid coconut oil in it by Nature’s Way. You can find the mister on Amazon too. I don’t use my waffle maker very often because of the teflon issue. I searched and found a ceramic waffle iron on Amazon. Oster CKSTSKFM12W-ECO Dura Ceramic Flip Waffle Maker. Very cool, gotta get one.

  16. I don’t have a waffle iron but I made this recipe with pancakes. They are definitely thicker cakes, not really fluffy, mainly because the recipe is designed for waffles. But it’s none of the less delicious. I made them with the Hodgson Mills GMO Free Verified unbleached white flour, I’ll have to use almond flour when I use it up, I’m in the process of making them with no bananas, but apples and cinnamon right now. But they are excellent! I’m sure these would be good with quinoa or coconut flour.

  17. I just made these for breakfast and next time I think I’ll leave out the water or maybe use coconut milk. My batter was very watery so I added a little coconut flour to thicken, then with the second waffle, I realized I hadn’t added salt so I added a dash of salt and more coconut flour because the first waffle was a little mushy and difficult to get off the waffle iron. The second one turned out better, more like what you’d expect a waffle to be. These were an overall success though, very tasty and the walnuts make it resemble a good banana bread. My husband’s been whining like a child lately because I’ve been experimenting with a variety of grain-free pancakes and he thinks they’re all weird and doesn’t understand why I can’t just make ‘normal’ pancakes. I asked him how they were and he said with a surprised chuckle “they’re actually pretty good” and then he went back for seconds…it might not sound like much, but coming from him it’s pretty amazing 😉

  18. My son was recently diagnosed with “ADHD” and we have him on a low sugar diet (mostly steering away from added sugars but still watching natural sugars, too). I though these were a great substitute for the typical candy filled breakfast my children would have on Christmas morning. I processed almonds to make the almond flour and even added a little flax seed. I did have to add a little whole what flour because I didn’t have quite enough almond flour. Anyway, what I’m getting to is: these waffles were seriously delicious! I will definitely make them again! Thank you so much for such an awesome, healthy recipe!

  19. I made these using amaranth flour instead of almond flour, added about 3/4 cup more flour then recipe calls for and made pancakes…..yum! Im just starting out cooking with amaranth, but there arent very many recipes out there for amaranth, thats why I wanted to try this recipe with amaranth and it turned out very good!

  20. These tasted amazing. Mine were a little soggy out of the waffle maker. So I threw them in the toaster to crisp up. amazing flavor. Made my own almond meal in the food processor – Thanks for recipe! #paleo

  21. Waffles taste great. Added quite a bit more almond flour + gluten free baking mix to get to waffle consistency. Recommend adding ghee or coconut oil to the mix itself to prevent waffles from sticking to iron.

  23. I made these as pancakes because I could not find my waffle maker; Just didn’t add the water. The second time, I added 1/2 cup pumpkin instead of the bananas and for walnuts I replaced with pumpkin seeds and they where also Delicious!! Amazing : THANKS Food Babe!

  24. Followed the recipe to every detail. I’ve made Belgium Waffles for years, these were reallllly good. However, extremely frustrating to make. The waffles never got fluffy and stuck all over my waffle iron (yes I sprayed). They were a gooey mess.

    Nevertheless tasted very good, but I served my family plates of waffle crumbles from scraping them off my iron. Will use regular waffle mix and add flavor ingredients next time.

  25. I made these and they were GREAT! I know Almond flour is expensive, so I used unbleached white whole wheat flour (Arthur’s) and I’ll make them again.

  26. I made these today using one-fourth, plus two tablespoons, organic oat flour. Due to not enough almond flour. They were probably the best waffles I’ve made!
