How To Make An Organic & Non-GMO Halloween Dinner & Dessert

I had the wonderful opportunity to share some seasonally inspired dishes that are both organic & non-GMO on NBC’s Charlotte Today you don’t want to miss!

Sweet Potato Black Quinoa Coffins

Serves: 4
Ingredients
  • 1 cup black quinoa
  • 2 medium sweet potatoes
  • 1 pomegranate
  • 2 tsp chopped red onion (optional)
  • ¾ cup chopped pecans
  • sea salt and black pepper to taste
  • ½ tsp nutmeg
  • 1 tsp coconut oil
  • 1 tsp honey to drizzle
  • 4 green olives
  • 1 green pepper cut into thin slices
Instructions
  1. Preheat oven to 375 degrees
  2. Wash and scrub sweet potatoes and prick with a fork
  3. Bake sweet potatoes on pan for about 40-50 mins or until tender
  4. While sweet potatoes are baking, cook quinoa to package instructions
  5. After quinoa is finished cooking, combine onions, pecans, coconut oil, nutmeg, and pomegranate seeds to quinoa and stir
  6. Allow sweet potatoes to cool slightly, cut in half longwise, and scoop out a couple of tablespoons of the middle
  7. Fill each sweet potato half with ¼ quinoa mixture
  8. Decorate each "coffin" with green olive head and green peppers for the body
  9. Drizzle each coffin with honey if desired
  10. You might have left over quinoa, depending on how big your sweet potatoes are, the left overs are perfect to enjoy the next day as a salad.

Sweet Potato Coffins

The little green alien men on the coffins were made using green olives and green peppers. This recipe also uses black quinoa, which has the same amazing nutritional qualities as golden quinoa, but is a little nuttier in taste and texture. Quinoa is the only plant food that has all 9 essential amino acids and is why I incorporate it in my diet so much. It’s the perfect substitute for meat in a meal.

Ingredients
Instructions
  1. Combine almond butter, coconut oil, salt, vanilla, and maple syrup and stir well
  2. Place mixture in a 8x8 pan or small dish lined with parchment paper
  3. Top with chocolate pieces
  4. Place in freezer for at least 3 hours
  5. Cut into small bite square sized pieces and enjoy!

These are not Reese’s Pieces! I bought these “Sun Drops” at Whole Foods and they have no artificial coloring or GMOs. The colors automatically remind me of fall, so they are perfect for Halloween or Thanksgiving.

  1. Hi Vani, I was looking at your recipe for Halloween Bark and I’m glad you included a link to the Sunspire SunDrops site. Based on the ingredients I was surprised to see all the hidden forms of MSG. I was wondering, Number 1) How can the Sunspire SunDrops say that they are “All Natural and Never Artificial”??? And 2) How and why would you included this product in your recipe?

    I have just discovered your Facebook page/website and you have so much great information and go into such detail about these topics. I am also very sensitive towards MSG and the chemicals found in so many of the foods today so it’s refreshing to see that you’re getting the information out there!

    1. I don’t like the ingredients listed in the Sunspire chips either. Soy is in there so how is it not GMO. I would sub the candy with nuts.

      1. Sirius,

        I may be wrong, but actually, things with soy can be non GMO, if they are labeled “organic”. I believe that things labeled organic must be GMO free, so organic soy (which is non GMO) is used in those products. However, in looking at this product (cannot see the back of the package though), I do not see where it says it’s organic.

        In this case, it’s unknown whether the soy is organic or not, from what I can see of the package. I would think Food Babe has done her research and would not use a product with GMOs, but more clarification would be appreciated for sure.

      Check out Enjoy Life brands. They have different kinds of baking chips, not the candy coated one as of yet, but at least an option.

    3. What ingredients had hidden MSG?

      Ingredients of the milk chocolate SunDrops: Milk chocolate (evaporated cane juice and unsulphured molasses, whole milk powder, cocoa butter, unsweetened chocolate, soy lecithin, natural vanilla), evaporated cane juice, whole rice solids, coloring (beet juice, beta carotene, caramel), vegetable wax, beeswax. Contains milk and soy.

  2. I recently started to become more diligent about buying food without added chemicals, it can be overwhelming and time consuming but so worth it. I started slowly, using up stuff and replacing it with healthier versions. The best thing I did was buy coconut oil and actually use it in my cooking. Your website has been an amazing asset to this process, thank you for all of your hard work. I have made the Halloween bark several times now and love it more and more each time. I have a big sweet tooth and opting for the healthier sweets makes me feel better. My 12 year old loves it too!! I accidentally bought the crunchy almond butter and it came just as yummy, a little more crunch is always good.
