Apple Pie Chia Pudding – Make-Ahead Breakfast Idea!

I love to eat in season and apples are officially in season! There are so many different nutritious varieties to try but just make sure you choose organic because apples are one of the most heavily sprayed fruits ever and is at the top of the dirty dozen list! 

This Apple Pie Chia Pudding is the perfect make-ahead breakfast recipe. ​I love eating chia seeds for breakfast because they grow 10 times their weight in size when combined with liquid, helping the body stay hydrated and full. Having the most content of omega 3 fatty acids of any plant food, they fight inflammation in the body, reducing the chance for heart disease, Alzheimer’s, and depression. This recipe is packed with brain-boosting walnuts to help you start your morning off right too.

Apple Pie Chia Pudding

Serves: 4
Ingredients
  • ½ cup chia seeds
  • 3 cups coconut milk
  • 1 teaspoon apple pie spice, more as desired (see below for recipe)
  • 1 teaspoon vanilla extract
  • 1 apple, shredded
  • 2-3 tablespoons maple syrup (optional for additional sweetness)
  • ½ cup coconut flakes
  • ½ cup chopped walnuts (nut allergy: omit)
Apple Pie Spice:
  • 2 tablespoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • ½ teaspoon ground allspice
  • ½ teaspoon ground ginger
Instructions
  1. To make the apple pie spice, mix together all of the ingredients in a bowl.
  2. To make the chia seed pudding, mix together all of the ingredients except the coconut flakes and walnuts. Place in the refrigerator overnight.
  3. To serve, place some of the chia seed pudding in a bowl. Sprinkle with some of the coconut flakes and walnuts. Enjoy!

  1. Yes, are we able to use another milk beside coconut milk to derive a delicious breakfast snack???

  2. A member of my family is allergic to coconut. Is there a good substitute (or more than one) for all of the coconut variations in so many recipes. I made hemp milk and nobody liked it.

  3. In a world where people think Lucky Charms is food, this is such a rocking breakfast idea Vani! Love it. And of course anything that I can make ahead of time is a big win for me, we so struggle to get everyone off to work and school in the morning. Mornings are loopy here.

  4. How about grinding the seeds first, instead of whole seeds! Better for the intestinal system, in my opinion. Would 1/2 cup of ground chia seeds still work well?

  5. Made this LOVED it, soaking the Chia seeds makes a pudding like consistency also shredding/spiralizing the apple is great too. I added a pinch of salt to the second batch , helped my taste buds. Toasted the walnuts, and enjoyed it !!

  6. Please be thorough. Someone is going to put the entire apple spice mixture in the recipe. After giving the instructions for the Apple pie spice. Tell them how to store it! Love the recipe!

  7. I used all the pie spice ingredients in this recipe minus one tbsp. of cinnamon. After reading comments, I included a pinch of sea salt.

  9. I know apples are so toxic for me, they make my stomach hurt so bad, walnuts are great but chia effects me really weird, I get dizzy and can’t sleep that night. What Ccn I use instead? (coconut is not recommended for my fibro, why is that?)

    1. i think a different recipe is best for you and maybe some acupuncture to help your digestion issues.

  10. My husband won’t eat this so I’m wondering if I can still make 4 servings and store in the fridge to use during the week?

  11. How many days will this pudding keep in the frig ?? Can it be frozen ?? Thanks.
