Food Babe's Broccoli Quinoa Tabbouleh

Ingredients
  • 1 cup broccoli
  • 1½ cups cooked quinoa
  • 3 tablespoons olive oil, more as needed
  • 3 tablespoons fresh lemon juice, more as needed
  • ¼ teaspoon chili powder
  • 1 cup chopped parsley
  • ½ cup chopped mint
  • 2 scallions, chopped
  • Sea salt and pepper, to taste
  • ¼ cup pumpkin seeds
Instructions
  1. Place the broccoli in a food processor and pulse until a rice like consistency has formed. Pour into a bowl along with the remaining ingredients. Mix to combine.
  2. To serve, place half on the tabbouleh on a plate and top with half of the pumpkin seeds. Enjoy!
