Ingredients
  • 6 ounces lentil pasta, cooked according to package instructions
  • 1 small zucchini, sliced thin and halved
  • 1⁄2 red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1⁄4 cup diced red onion
  • 3 to 4 radishes, sliced thin
  • handful parsley, chopped
Vinaigrette:
  • 1⁄4 cup extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon lemon juice
  • 1 garlic clove, minced
  • 1 teaspoon dijon mustard
  • 1 teaspoon raw honey, more as desired
  • 1⁄2 teaspoon oregano
  • sea salt and ground black pepper, to taste
Instructions
  1. Place all of the salad ingredients in a bowl and mix to combine.
  2. To make the vinaigrette, whisk together all of the ingredients.
  3. Pour the vinaigrette over the pasta salad and mix to combine. Let sit for at least 20 to 30 minutes to marinate.
