Ok off my soap box and on to Sunday eats!
Started the day with Habit #1 (are you tired seeing me do this everyday yet?)
Drank up some Vibrant Health Green Vibrance superfoods powder and scurried to the gym to do a quick hour of cardio.
Afterwards – I had a huge green smoothie similar to the one I made the other day -Flax seeds, chia seeds, mixed frozen berries, protein and at least 3 cups of kale – oh and splash of lemon.
I was super duper productive yesterday – I can’t reveal what I was working on yet – but I really think this community of readers is gonna like it!!!!
For lunch I whipped up a quick tahini dressing to have through the week….
I made a huge salad with arugula, red peppers, raisins, red onions, sprouts and brazil nuts. I paired the salad with some almond butter and my favorite buckwheat crackers from Twin Cakes Bakery. For a treat I had two calimyrna figs stuffed with a few almonds. DELICIOUS, I tell ya!
Here’s a close up of the fig stuffed with almonds – To do this, all you need to do is to carefully slice the fig horizontally in half (they might be swooshed coming right from the package, you can stretch them out to make this easier). This is my new favorite treat to have with tea in the afternoon now too!
I hit up BE Yoga studio in the afternoon for one of Christine Navarro’s intermediate classes. The class rocked! We practiced hand stands! (I’ve been practicing everyday now for the last 4 days and might make this one of my new year’s goals… I’m scared to move away from the wall, though…I know I have the balance and core strength to do it on my own – but I’m soooooooo afraid of falling on my back – which I injured last year…)
My husband had a nice freshly pressed green juice waiting for me after Yoga. What a guy, I tell ya!!!
While I drank the green juice – I made dinner – On the menu:
Chana Masala (Recipe soon!), Quinoa and Cauliflower Rice!
What’s cauliflower rice, you ask? It’s the easiest thing you’ll ever make…. In a food processor – I grind a whole head of raw cauliflower into small bites – add a dash of salt and pepper and that’s it! This is a wonderful way to incorporate raw eating into ethnic cuisines that use a lot of rice. The cauliflower rice soaks up all the good spices and flavors perfectly! (Think – Indian, Mexican and Chinese… the possibilities are endless).
Dinner was seriously satisfying – A great combo of filling fiber and protein. But it did leave a little room for something sinful. I had a piece of raw cacao fudge with hazelnuts and few organic chocolate covered goji berries.
Later in the night – I went out on the town with my best friend Nicole – (She teaches Air Ballet and Barre Strength at Flex and Fit – Go check her out if you live in Charlotte)… Nicole and I were PARTY ANIMALS back in the day. We’ve known each other for about 26 years… So that’s a lot of partying.
We sat outside of Dharma Lounge for a couple of hours by the fire to catch up on everything. We also met some really awesome people.
The night ended with us dancing in the DJ Booth (Peter Presta). Somethings never change !
