Beet Root French Fries

A few weeks ago I received a new cookbook called Veggies for Carnivores which totally made me giggle and immediately think of one of my male friends that won’t go near any vegetables…Did Lora Krulak, the author, unlock the secret to turning veggie haters into veggie lovers?

The simplicity of ingredients and recipes makes bringing vegetables to the center of the plate a piece of cake! I don’t know anyone who could pass up these beet root french fries I made today inspired by one of the recipes in her book. She suggests you can substitute any root vegetable (carrots, parsnips, sweet potatoes, etc.) – but I just couldn’t resist making the fries with beautiful beets. Beets are absolutely incredible blood cleansers and can protect you from cancer by getting rid of all the toxins that enter your bloodstream… I try to eat them every week and getting them in just got a little bit more delicious – Thanks Lora!

Serves: 2
Ingredients
  • 2 large beets
  • 1 tbsp olive oil or coconut oil
  • ¼ tsp sea salt
Instructions
  1. Preheat oven to 375 degrees
  2. Wash and peel each beet, cut into long rectangular pieces
  3. Toss beets with olive oil or coconut oil and sprinkle with sea salt
  4. Place beets on a oven safe rack and bake for approximately 25 mins, rotating half way through
  5. Beets should be slightly brown when done, serve immediately
  6. Toss with red chili flakes and lime for a kick!

  1. What’s your take on golden beets? do they have same positive powerful blood cleansing/ detox as the red beets? for some reason lately i found golden beets more easily than red beets. I do prefer the red one though. Thank you for sharing this great recipe. will try it for sure 🙂

  3. I LOVE beets after discovering them not in a can! I have even converted people to try them. I sauté in coconut oil or I wrap in foil with coconut oil and salt too. Gonna try the fries for sure. Would love to win the cookbook!! thanks

  9. Vani, I’m a beet lover and often roast them with other veggies. I’ve had sweet potatoes fries and turnip fries so now it’s time to give beet fries a try.

  11. just something I tried and was really nice. Sweet potatoes the way “tostones” are made in Puerto Rico. Cut the sweet potatoes in thik circles and fry for some minutes, take them out of pan and smash with “a tostonera” and fry them again, the result is a crispy french fried sweet potatoes.

    I tried this after a vacation in Puerto Rico and back here in Spain it is difficult for us to find the “platano macho” that is what they use to make the tostones, I tried the sweet potatoes and are really delicious. May work as well with beets.

  12. You had me at BEETS!!! I do the same kind of idea with sweet potatoes wedges (skin on). Toss with a blend of olive or coconut oil and a mix of freshly ground fennel and coriander seeds, red chili flakes, black pepper, oregano and salt. YUM!!!

  15. I tried this with carrots and they weren’t as good as I was hoping they’d be. But, I may have to give it another try…I don’t think there’s any other way I’d get my family to eat beets!

  16. Rule of the day…remember to eat only Organic beets. Monsanto has perfected GMO beets for a long time now…and probably other beet varieties too!
