Staring at the Sun after Rainy Day Eats

Good Morning!  Yesterday was a rainy mess here in Charlotte…It’s suppose to be sunny and bright here all day today and I can’t wait.  I love sun.  Speaking of sun – Have you seen this trailer yet about people who gaze at the sun all day long for energy – this $hit is crazy!!!!!!

Sooooo…before I go burn my eyes out today eating the sun… I thought in consideration of all the heavy posts about UNTRUSTWORTHY & DECEPTIVE companies and things – I thought I would lighten the mood with some “Everyday Eats” for the next couple of posts … What do you think?  Do you like to see what I am eating? Or is this just a waste of energy? Would you like me to get my stool back out so I can climb back up on my SOAP BOX? (Don’t worry – that stool is not far away – it’ll be coming out again. I promise that.)

On to yesterday’s breakfast…

Of course it started with a big glass of hot water with lemon and cayenne (Habit #1 for the New Year and Beyond- remember?)

Then followed shortly after with some Green Vibrance super foods powder…. BTW – This stuff totally reduces sugar cravings… love it love it love it.

Then I had some green juice (made with dandelion, celery, cilantro, parsley, ginger, lemon, garlic) a little later in the morning. It was bottled from a day before in a left over Vitamineral Greens bottle.  I love to save these bottles because they are awesome bottles to store juice in – they are coated so they don’t let the light in – preserving the juice quality even more than clear glass…

I followed the juice about 20 mins later with some homemade Parfait Porridge – Mixed berries and oat groats soaked overnight with almond milk.  YUMMY.  Have you tried it this recipe yet?

For my workout – I did some cardio at the gym and hit a lunch time hot yoga class…

After yoga I drank more green juice like the one above, and followed it by an enormous salad – It had everything! Arugula, mixed greens, sprouts, avocado, brazil nuts, beets, carrots, apples, red peppers, red onion and tahini dressing (Tahini Dressing – 4 tbsp tahini, 1 tsp hemp oil, 3 tbsp apple cider vinegar, 1 tsp honey, 4 tbsp water, salt and pepper  – stir stir stir, and ta daaaaaaa!!! Quick yummmmmmmy dressing for at least 3 days worth of salad.) I also had some protein powder and chia seeds mixed with water.

In the late afternoon, after some meetings – I had a Cashew Coconut Biscotti from Twin Cakes Bakery with green tea – AMMMMAZING. These little suckers do not last long enough for a picture – that’s how good they are.  I had to resort to taking a picture of the box – sorry! They have no flour and are made with coconut palm sugar. Cool, eh?

I was really excited to meet my friend Jessica out last night.  Jessica was a bridesmaid in my wedding and it had been way too long since we caught up for dinner and drinks.

We went to the new Spanish tapas restaurant called Malabar – formerly in the space of “Coco Osteria” right off Tryon street…. Same owners but totally new food!

The menu is expansive with a lots of vegetarian and fish options…

I started with a mixed salad with dressing on the side – I gave my hunk of blue cheese to Jessica – she’s a cheese fanatic.  (We later had a conversation about this……) 🙂

We also got the Marcona Almonds and this Roasted Eggplant Bruschetta – We both loved how the bread was paper thin – perfect sizing!

And we shared a huge steaming hot dish of Paella – It’s been a while since I had a variety of seafood like this – It was DELICIOUS! There were lots of veggies mixed in with the rice – a very nice surprise!

Jessica and I are not shy about dessert – so we ordered two!  We tried the Tres Leche Cake and the Creme de Catalana…. Both were very tasty… A perfect ending to the evening… We spent 4 hours at dinner. Yes. 4 hours.

I came home – heated up some water, drank some ginger tea and hit the sack!

  1. The only time I can recall a four hour dinner was in Italy. It was a huge family gathering with about 10-15 dishes total. Everything was was made one course at a time, so it was extremely fresh and the aroma made you crave it as it was being prepared. My favorite dishes were the fresh mushroom soup and the roasted chestnuts with lambrusco. They roasted the chestnuts over a fire right in the room!

    1. Mary Beth – You seriously just made me CRAZY hungry. There is no better food than what is available in Italy! What an incredible experience – and the chestnuts! Wow! Thanks for sharing…

  2. haha those sun people are crazy. I do enjoy your soap box, but thanks for sharing your food as well, I am going to try that salad dressing 🙂

    1. I CAN’T WAIT to watch the whole film… they do look like a bunch of crazies, but doesn’t it make you wonder about the power of energy? 🙂 If the salad dressing is too thick, you can add a little more water too. I usually have to do this the next day after initially making it… Good Luck Liz!

  3. I love reading/seeing what you eat!!! It has given me so many new, fresh, and super healthy ideas!!!! Except for the lemon water- I wake up with the worst stomach tightness the next morning! =(

    1. Oh no – that’s not good! I wonder what is causing the tightness!? Do you think it is the lemon water or something you ate the night before?

      1. Could it be all of the fiber I take in? I have been staying away from soy also, so I know it isn’t that. I take an echinacea supplement each night along with the hot lemon water. Maybe it is the time of day I drink it? I’ve been doing the elimination diet to figure out what it was and right now I THINK I can attribute the lemon water as one, but not the sole cause!

  4. Not sure if you’ll see this since I’m a year+ behind when the post was added! 😉 I am sort of new to your site and…ummm…obsessed!!! I am trying to start taking all of these toxins out of our (me & my family’s) lives. From food to cleaning supplies to cosmetic and beauty (I’m a makeup fanatic so this one will be tough but fantastic for me!). Anyhow, I’m planning on trying your porridge parfait this week–we lobe overnight oats in a jar but we use quick or rolled oats so I’m really looking forward to trying oat groats!!
    My question (finally!!!) is: the green vibrance powder you recommend above, I was adding it to my amazon “wish list” (easiest way I’ve found to make a list of all your suggestions to buy as I need them!) And I noticed the green vibrance has 750 mg of non-GMO soy lecithin in a serving. Is that bad? I feel like when I see the words soy lecithin, I should be shuddering?!? Am I wrong? I was excited to try this powder but wanted to ask your thoughts on the soy part! Thanks so much for all this amazing info here-i could spend forever reading through your blog (& have been!)…but I’m so behind, so I better get to work and try to read faster! So much info, so little time! Keep up the great work! Thank you!!!!! 🙂

    1. Hi Jennifer – Great question! Green Vibrance now uses sunflower lecithin which is a safe ingredient. Make sure you are buying the newer version with this instead of soy lecithin.
