Goji Berry Cookies

I love making cookies this time of year, but I hate using white flour, white refined sugar and a bunch of other ingredients like artificially dyed sprinkles to make my cookies look festive. That’s why I love ingredients like goji berries that are naturally a beautiful red and make these cookies perfect for the holiday season!

The ingredients in these cookies are so freakin’ healthy too. But don’t let that healthiness scare you into thinking they aren’t delicious. Just try them and you’ll see! These cookies go delicious with a hot cup of coffee or tea in the afternoon too.

Food Babe's Goji Berry Cookies
 
Serves: 8
Ingredients
  • 1¼ cup almond flour (nut allergy: use spelt flour)
  • 1 cup rolled oats
  • ¼ teaspoon sea salt
  • ¼ teaspoon cinnamon
  • 1 teaspoon baking soda
  • 2 tablespoons ground flaxseed
  • 1 egg (vegan option: mix 1 tablespoon ground flaxseed with 3 tablespoons water and let sit for 10 minutes)
  • ¼ cup coconut sugar
  • ⅓ cup mashed ripe banana (about 1 medium banana)
  • 2 teaspoons vanilla extract
  • ¼ cup coconut oil, melted
  • ¼ cup goji berries
Instructions
  1. Preheat oven to 375°.
  2. Whisk flour, oats, salt, cinnamon, baking soda and flaxseed together in a large bowl.
  3. In a medium sized bowl, whisk together egg, coconut sugar, mashed banana, vanilla extract, and coconut oil. Add in goji berries and stir.
  4. Mix wet ingredients into dry ingredients and stir. Finish mixing together with your hands if needed to get fully mixed.
  5. Roll into 8 golf ball sized balls and place on baking sheet. Gently flatten with palm of your hand.
  6. Bake about 12-14 minutes. Let cool on a wire rack for 10 minutes.
Notes
Please choose all organic ingredients if possible. These freeze well to use later in the month. Thaw overnight at room temperature and heat slowly in oven or eat at room temperature.

  3. Sounds great! And I love coconut sugar and oil but recently found out that I am very allergic. What is an alternative oil that is healthy. I use evoo, but know shouldn’t in high heat. What could I use in these cookies ? For sugar I love the date sugar but have organic cane sugar.

    1. They are naturally gluten free since they are a berry (not a grain). You won’t find berries on any of the lists for food with gluten since it requires a mixture of 2 different proteins to make gluten, mostly found in grains, barley.   4. Is baking soda safe to eat? I’ve heard that its also used to kill cockroaches and in fire extinguishers. Surely that can’t be doing my body any favors if its also strong enough to kill a bug or put out a blaze!

    1. Baking soda is completely safe to eat. It is in most baked goods that you make at home or buy at the store. It’s one of those “Does it all” food ingredients. You can make it into a paste to clean the most stubborn stains from your stove & cookware, it absorbs smells so people use it in their fridge & shoe boxes. It’s kinda like how a lot of people use vinegar for cleaning even though it’s a food item. You can look it up if you want more information about it.

  5. I’m not at all sure how a refined all fat product like coconut oil got its undeserved good reputation. It is a health disaster on many perspectives. To pick a lesser known one, consider its Omega 3 Balance Score of -2 compared to salmon oil +263.

  6. Delicious!!! Wonderful texture and flavor. Love the coconut oil and coconut sugar in this recipe all the flavorings are perfect and subtle. They will not last long in our house!

  7. Will the consistency of these cookies be okay if I do not have a banana?
    Would I need to replace with applesauce or anything instead? I have all the other ingredients except bananas.

    Would love to try these out!

  8. Loved these cookies! They were very easy to make. I didn’t have gogi berries so I used raisins. There are a lot of possibilities with these cookies. Did you ever try making them smaller and how long to bake them if smaller in size. They were a hit in my house, delicious! Just a shout out about ginger tea with fresh ginger…so much better than store bought. Thanks for all your great healthy ideas!
