Beet Root French Fries

A few weeks ago I received a new cookbook called Veggies for Carnivores which totally made me giggle and immediately think of one of my male friends that won’t go near any vegetables…Did Lora Krulak, the author, unlock the secret to turning veggie haters into veggie lovers?

The simplicity of ingredients and recipes makes bringing vegetables to the center of the plate a piece of cake! I don’t know anyone who could pass up these beet root french fries I made today inspired by one of the recipes in her book. She suggests you can substitute any root vegetable (carrots, parsnips, sweet potatoes, etc.) – but I just couldn’t resist making the fries with beautiful beets. Beets are absolutely incredible blood cleansers and can protect you from cancer by getting rid of all the toxins that enter your bloodstream… I try to eat them every week and getting them in just got a little bit more delicious – Thanks Lora!

Serves: 2
Ingredients
  • 2 large beets
  • 1 tbsp olive oil or coconut oil
  • ¼ tsp sea salt
Instructions
  1. Preheat oven to 375 degrees
  2. Wash and peel each beet, cut into long rectangular pieces
  3. Toss beets with olive oil or coconut oil and sprinkle with sea salt
  4. Place beets on a oven safe rack and bake for approximately 25 mins, rotating half way through
  5. Beets should be slightly brown when done, serve immediately
  6. Toss with red chili flakes and lime for a kick!

I love that you not only have healthy recipes/tips… but you discuss the science behind your chioces and suggstions. the best blog i’ve found in a long time… just what the dr. ordered! 😉

    the cookbook looks awesome and so do the beet french fries… a favorite food of mine is french fries…(i do not have them that often at all… ) but unfortunately, i’ve recently read that they are the.worst.food.ever. 🙁

    baked sweet potato fries are a nice substitute… these are definitely going to be added to the rotation!

  7. When doing this with carrots, I add a few drizzles of maple syrup when I toss them! My kids love them that way!

  8. I have made butternut squash fries, but never heard of beet fries. Didn’t know they were possible. Will definitely have to give them a try.

  9. YUMMO!!! Not only would our family eat these (and already do, bt the FF shape makes it that much more appealing), but our African Gray would love these as well – minus the salt! When we roast beets, I usually sautee the greens as another side dish. Two sides from one veggie = awesomeness!!!

  14. 5 months ago I had an epiphany (just turned 50) and thought if not now when? I’m talking about my health. I was 20+ lbs over weight and not feeling good. Since than I have become a vegan, lost the 20 lbs and feel sooo much better. I do find myself eating the same 3-4 foods thou. Your emails inspire me, in fact I am going to buy beet roots (for the first time) after work and try this recipe. See how you inspire me..lol

  19. Yumm! Being Polish, I am used to eating beets in a variety of ways but I must say I’ve never tried them in a “french fry” form!
