Organic Pumpkin Muffins Recipe Your Whole Family Will LOVE!

Have you seen those Wendy’s commercials from the 80’s where the lady would yell “WHERE’S THE BEEF?!”

Well, that’s what I think when I see the ingredient lists on pumpkin spice products at the grocery store…

Where’s the pumpkin spice?!?!

This time of year there are dozens of pumpkin spice goodies, drinks, and shakes…but almost all of them are full of chemical flavors made in a lab with tons of heavily processed ingredients. 

For example – These Pumpkin Spice Cupcakes look delicious…but with Polysorbate 60? Sodium Acid Pyrophosphate? Mono and Diglycerides? Natural Flavors? No WAY. 

And these pumpkin crumb cakes look so good, but this ingredient list hurts my eyeballs. SO MANY processed ingredients, and artificial flavors are listed how many times??? These are toxic.

Look at these Pumpkin Spice Hot Cocoa Bombs…you’d think these would have real pumpkin spices. But nope! More artificial flavors and tons of dyes. Disgusting!

The WORST of the worst are Pillsbury’s Pumpkin Spice Rolls. How they get away with selling these just disgusts me…

How many parents buy these artificially-flavored and artificially-dyed rolls for their kids without knowing the health risks involved?

I love switching up the type of muffins I serve my kids. I want them to enjoy a variety of fruits and vegetables, and I love how good pumpkin is for them and me. These pumpkin muffins are perfect for freezing and reheating on busy school mornings. They also are a great lunch box addition.

And, of course, they contain REAL pumpkin, REAL pumpkin spices, and REAL vanilla extract. I can’t wait for you to try them!

Serves: 10-12
Ingredients
  • ½ 15-ounce can pumpkin puree
  • 1 ripe banana, peeled
  • 2 eggs
  • ⅓ cup coconut oil
  • ¼ cup raw honey or pure maple syrup
  • 1 teaspoon vanilla extract
  • 2 cups rolled oats
  • 1 teaspoon baking soda
  • ¼ teaspoon baking powder
  • ½ teaspoon sea salt
  • ½ teaspoon pumpkin pie spice
Instructions
  1. Preheat the oven to 350°F.
  2. Place all the ingredients in a blender and blend until well combined. If making a vegan version of this recipe, substitute 2 tablespoons ground flaxseed mixed with 6 tablespoons of water for the eggs.
  3. Pour the batter into a lined muffin tin; each cup should be 3⁄4 full. Bake for 20 to 22 minutes or until a toothpick inserted in the center comes out clean.

  1. Everyone is well aware that they are responsible for reading food labels. How about start speaking out about the poisonous ingredients in the vaccines that get injected into children everyday? Vaccines have no legal liability. Your barking up the wrong tree regarding the food ingredients. Please join the medical freedom movement! It’s about time!

    I made these, and although delicious, mine do not look like your photo. Did you add any flour at all? With just the ingredients in the recipe, my texture was more like a fudgy pumpkin brownie?! Yes, I did use a tester and baked until it tested clean. Please advise. Thank you!

  3. I just ate one and I’m impressed. I forgot to add in the coconut oil since I didn’t want it to harden with the cold maple syrup. Enjoying it without the oil.
