Orange Poppy Seed Cranberry Hemp Muffins

Putting together poppy seeds & Nutiva hemp seeds was the best idea ever and no, I’m not a drug dealer. I had no clue these flavors would work so well together…These muffins turned out to be so good!

I am always on the hunt for the best available products to try (nutritionally speaking of course) so I was super excited to try Einkorn, an ancient grain that is the most ancient form of wheat that has not been hybridized or denatured in any way. It’s higher in vitamins, minerals, fiber and protein than the typical whole wheat flour products you see on store shelves. “Einkorn is a rare gift, untouched by modern influence.”

Jovial Foods sent me several different products to try and I’ve already broke into all them. I substituted wheat berries for this quinoa recipe, added almond butter to their cookies and tried their pasta. Trying this flour on the other hand, was the true test of this ancient grain. Could it make a moist and fluffy muffin? Well…. yes… it did and all 6 of the muffins I made last night have all been deliciously consumed!

For some random reason I picked up some organic poppy seeds during a grocery store trip last weekend… I haven’t cooked with poppy seeds ever before – but I love the flavor, texture and the nutritional qualities I learned about while I was visiting the Golden Triangle (where Thailand, Burma and Laos meet) earlier this year. While we were there, we even visited the Opium Museum, learning much more than I ever expected about the poppy plant. Poppy seeds have unique medicinal properties (much like the hemp seed) in treating various alignments like asthma, allergies, and pain.
Can’t wait to make another batch of these bad boys tonight.

Serves: 6
Ingredients
  • ¼ cup shelled hemp seeds and 1 and ¼ cup water or ⅓ cup hemp milk
  • 1 large orange seeded and diced
  • ½ tsp orange zest
  • ⅛ cup coconut oil
  • 1 tsp vanilla
  • ¼ cup coconut palm sugar
  • 1 large egg or 1 tbsp flaxseed mixed with 3 tbsp water
  • 2 tbsp poppy seeds
  • ¾ cup flour – I used Jovial Einkorn Ancient Grain Flour
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • ¼ tsp sea salt
  • ¼ cup apple juice sweetened cranberries
Instructions
  1. Preheat oven to 350 degrees
  2. In a large mixing bowl, combine flour, cinnamon, zest, baking powder, and salt and set aside.
  3. Make hemp milk by combining hemp seeds and water into a blender.
  4. Strain milk using a strainer or nut milk bag – and put aside
  5. Blend orange, oil, egg or flax seed, sugar and vanilla in a blender
  6. Add ⅓ cup hemp milk and continue blending a few more seconds to combine
  7. Combine dry ingredients and wet ingredients slowly
  8. Stir in cranberries and poppy seeds
  9. Pour batter into a lined or well greased muffin tin
  10. Bake for approximately 20 mins or until a toothpick comes out clean
  11. Let cool for 5 mins and enjoy!

  7. Hello Food Babe. At first I thought you were just another naturally beautiful girl who was jumping on the Health Food Bandwagon for gain. But after following you for a while…. boy was I wrong. You live, eat and breath this lifestyle and you are 100% a person of substance. Thanks for all you do!

    I sure would like those muffins! 🙂 I did educate some Ron Paul folks on GMO foods and the importance of labeling. Ron Paul’s people did not want to involve the government in solving the problems but now they realize how criminal and dangerous Monsanto’s seeds are and how they are slowly taking over and corrupting our organic food. We don’t have a free market when Monsanto takes over the Government and allows untested food on the market. We don’t have a free market when Monsanto’s GMO seeds intermingle with regular seeds and Monsanto says any profit from those mixed seeds goes to Monsanto! Allergies, obesity, gut problems, diabetes and cancer has skyrocketed in the past 10 years which is along the same timeline when GMO crops were introduced.

  8. I am so sad that California voted against Prop 37. I don’t think I have ever seen a greater fight against food tyranny than the fight against Prop 37. You, FoodBabe, were so brave at the Democratic Convention when you focused on the issue that no one else was addressing.

    Regular people don’t realize the importance of getting this food labled and/or off the market. I cannot think of anything that is more important than healthy food. We just could not fight against 47 million dollars! It ain’t over folks. We will keep educating!

  11. Im confused. It says this in their description on amazon… “Jovial einkorn flour is high-extraction flour at 80%, which means most of the germ and bran have been removed for lighter flour that stays fresh for longer.” I thought the “whole” purpose is to keep the bran and germ intact for it to be a true whole grain. Am I missing something?

  12. Made these muffins yesterday and they were AMAZING! I couldn’t find the Einkorn so I used just plain old organic all purpose flour. There is one muffin left this morning out of seven made and I’ll be doubling this recipe for Thanksgiving dinner! Excellent recipe Food Babe, as always you rock!

  13. Where do you find cranberries sweetened with apple juice? Every store I’ve gone too, even health food stores still have them sweetened with cane sugar.

  14. I’m just starting to research ways to eat healthy, and I have a question about Baking Powder. I’m interested in making the Orange Poppy Seed Cranberry Hemp Muffins but one of the ingredients is baking powder. I read somewhere that baking powder contains GMOs. Is this true for all baking powder, or is there a safe non-GMO baking powder available out there?

  15. I would love to make these but need the best gluten free flour to substitute for the one your using. I’ve tried baking with buckwheat and almond flour.. so far, no good.. I don’t know what I’m doing wrong. Help!

  16. These look really good and as we all like to know what is in our food, I would like to know what the nutrient are that are in all your recipes. You know, calories, fats, sugar, salt, carbohydrates, etc. Please??!! I am getting increasingly frustrated with all these healthy recipes being absent of these values.     1. Hi Jan – sorry but we do not supply nutritional info right now. Most people do not need to worry about it if they are eating a very clean, mostly plant based diet. There are many websites and apps that can calculate it for you if you plug in the ingredients. Good luck!

  19. I made this today, delicious. I did grind up my own einkorn berries and omitted the vanilla as I didn’t have it on hand. Super moist and yummy!
